New Chicken Gumbo Soup


 

Ingredients:

2 tbsp. butter
1 onion, finely chopped
2 stalks celery, finely chopped
4 cups chicken broth
½ green pepper, finely chopped
2 cups sliced okra
2 cloves garlic, minced
1 ½ cups canned tomatoes, with the juice
Salt to taste
Pinch of cayenne pepper
1 cup diced raw chicken
1 cup cooked rice

Directions:

Melt the butter in a large soup pot, add the onion and celery, and cook, stirring, for about 5 minutes or until golden brown. Stir in the broth, green pepper, okra, garlic, and tomatoes. Bring to a boil and then simmer for 30 minutes. Add salt to taste, the cayenne pepper, chicken meat, and rice, and cook for 2 more minutes. Taste and season accordingly.
