Slow-cooked Stuffed Apples

Ingredients:
6 large tart apples
2 tsp. lemon juice
1/3 cup chopped pecans
¼ cup dried apricots (make sure they don’t have added sugar!)
¼ cup packed brown sugar
3 tbsp, butter, melted
¾ tsp. ground cinnamon
¼ tsp. ground nutmeg
Granola for topping
Directions:
Core the apples and peel the top third of each; brush the peeled portions with lemon juice. Place in a 6 qt. slow cooker. Combine the pecans, apricots, brown sugar, butter, cinnamon, and nutmeg, and place a heaping spoonful of each mixture in each apple. Pour 2 cups of water around the apples. Cover and cook on low for 3-4 hours until apples are tender; sprinkle granola on top and enjoy
